Take a twist on a classic favorite with our Powered Red Hummus, featuring a burst of microgreens. Schmear it, dollop it, or spread it on anything for a creamy, flavorful bite.
Ingredients:
- 1/2 cup POWER GREENS
- 1 can chickpeas (or white beans)
- 1 cup roasted red peppers (approx 1 roasted pepper)
- 2 garlic cloves, minced
- ¼ cup fresh lemon juice (juice from 1 lemon)
- ¼ cup tahini
- 1 tsp cumin
- ½ tsp coriander
- ½ tsp smoked paprika
- ⅛ tsp cayenne pepper
- Olive oil, lemon rind & seeds or nuts to garnish
Directions:
- In a food processor, puree beans, roasted red peppers, garlic, lemon juice & tahini until smooth.
- Add the POWER GREENS & remaining ingredients. Add warm water, if required for a thinner consistency.
- Garnish with olive oil, lemon rind and seeds/nuts of choice.
Yield: Approximately 2 cups
